Each day, Chef Trevor Rendle designs the dinner menu at Earthsong to take advantage of local and seasonally available produce. Then each menu is handcrafted to take you on a culinary journey with flavours and portions beautifully balanced.

The rich vibrant produce of the South Pacific inspires Trevor to explore the romance of regional cooking and offers guests the opportunity to savour the finest taste sensations prepared in the time-honoured way. These wonderful flavours and the convivial lodge atmosphere bring guests together as friends and dining becomes a very memorable and special experience

Asparagus lemon-roasted and drizzled with a piquant sesame dressing

'Barrier' snapper charmoula on a crisp risotto cake

Main Course
New Zealand lamb tenderloin with spicy dukkah and slow-roasted tomatoes

Dessert
Grilled peaches with amaretto and crème anglaise

Braised baby leeks with walnut mayonnaise

Entrée
Scallop and rosemary brochettes with seared calamari on salad leaves and garnished with chilli

Lemon and dill sorbet

Main Course
Fillet of beef with a red wine and caramelized shallot sauce,Gratin Dauphinois potatoes, seasonal vegetables

Dessert
Caramelized New Zealand Rose apples with iced cinnamon parfait

Zucchini, mint and parmesan fritters

Appetizer
Seared whole baby paua on a bed of green salsa

Entrée
Fresh Great Barrier lobster tail steamed in a bamboo basket
 and served with a juniper berry and thyme infused sweet pepper sauce

Ginger and lime sorbet

Main Course
Fillets of Hauraki Gulf snapper on a crisp risotto cake and glazed with a saffron lemon and caper sauce

Dessert
Wickedly delicious chocolate soufflé
